200g grated courgette
225g plain flour
50g shelled pistachio nuts
1tsp sugar
½ tsp ground cumin
½ tsp chilli powder/cayenne pepper
1tsp baking powder
6tbsp olive oil
2 eggs
2 fluid oz water
1tsp salt
- Preheat oven to 180oc fan, oil a 1lb loaf tin
- Put grated courgettes in sieve, sprinkle with salt and leave to drain for 20 minutes
- Mix flour, nuts, baking powder and spices
- Beat eggs with oil
- Squeeze out courgettes as much as possible and add to flour mix
- Fold egg mix in and add enough water for a loose dough
- Pour into loaf tin and bake for 45 min
- Allow to cool in tin for 5 minutes and then transfer to a wire tray
