200g grated courgette

225g plain flour

50g shelled pistachio nuts

1tsp sugar

½ tsp ground cumin

½ tsp chilli powder/cayenne pepper

1tsp baking powder

6tbsp olive oil

2 eggs

2 fluid oz water

1tsp salt

  1. Preheat oven to 180oc fan, oil a 1lb loaf tin
  2. Put grated courgettes in sieve, sprinkle with salt and leave to drain for 20 minutes
  3. Mix flour, nuts, baking powder and spices
  4. Beat eggs with oil
  5. Squeeze out courgettes as much as possible and add to flour mix
  6. Fold egg mix in and add enough water for a loose dough
  7. Pour into loaf tin and bake for 45 min
  8. Allow to cool in tin for 5 minutes and then transfer to a wire tray
