2 eggs
100g soft brown sugar
150ml sunflower oil
150g finely ground wholemeal flour
½ tsp bicarbonate of soda, sieved
1tsp baking powder
100g raw carrots grated
50g mixed seeds
50g dried cranberries
25g sultanas
- Preheat oven to 200oc/400of/gas mark 6
- Whisk eggs and sugar until light and fluffy
- Gradually pour in the oil, continuing to beat
- Add flour, bicarbonate of soda and baking powder and mix well
- Add the remainder of the ingredients, mixing well
- Spoon into muffin cases
- Sprinkle with a few extra seeds if desired
- Bake for 20 minutes
- Remove from tin and allow to cool on a wire rack
