2 eggs

100g soft brown sugar

150ml sunflower oil

150g finely ground wholemeal flour

½ tsp bicarbonate of soda, sieved

1tsp baking powder

100g raw carrots grated

50g mixed seeds

50g dried cranberries

25g sultanas

  1. Preheat oven to 200oc/400of/gas mark 6
  2. Whisk eggs and sugar until light and fluffy
  3. Gradually pour in the oil, continuing to beat
  4. Add flour, bicarbonate of soda and baking powder and mix well
  5. Add the remainder of the ingredients, mixing well
  6. Spoon into muffin cases
  7. Sprinkle with a few extra seeds if desired
  8. Bake for 20 minutes
  9. Remove from tin and allow to cool on a wire rack
