Ingredients
- 400g self-raising flour
- 1tsp baking powder
- Pinch salt
- 100g unsalted butter
- 50g caster sugar (omit if using fruit)
- 180ml cold milk
- 1 egg + 4tbsp milk for egg wash (or just use milk)
Method
- Preheat oven to 220oc / 200oc fan
- Sieve flour, baking powder and salt together
- Rub in butter until mix resembles breadcrumbs. Make a well in the centre and add sugar and milk and mix lightly
- Knead lightly on a floured surface
- Roll out until 2cm thick, cut into rounds (about 16).
- Place on greased baking tray, brush with egg wash/milk and bake 8-10 minutes
Fruit scones: add 120g sultanas 30g glace cherries and pinch mixed spice
