• 400g self-raising flour
  • 1tsp baking powder
  • Pinch salt
  • 100g unsalted butter
  • 50g caster sugar (omit if using fruit)
  • 180ml cold milk
  • 1 egg + 4tbsp milk for egg wash (or just use milk)


  1. Preheat oven to 220oc / 200oc fan
  2. Sieve flour, baking powder and salt together
  3. Rub in butter until mix resembles breadcrumbs. Make a well in the centre and add sugar and milk and mix lightly
  4. Knead lightly on a floured surface
  5. Roll out until 2cm thick, cut into rounds (about 16).
  6. Place on greased baking tray, brush with egg wash/milk and bake 8-10 minutes

Fruit scones: add 120g sultanas 30g glace cherries and pinch mixed spice
