Salad Nicoise

The classic dish uses tuna steaks, but I love it as a simple mid-week dinner with a jar of Shines wild Irish tuna and whatever else you have leftover. If I have some bread (stale is great) I like to make bruschetta, simply toasting the bread and then rubbing both sides with the cut side of a garlic clove and pouring some good olive oil over – simple but delicious. Add whatever you have to the salad ingredients – I didn’t put in specific quantities as you can adjust depending on numbers you have to feed.

Ingredients:

Salad dressing

  • 3 tbsp olive oil
  • 1 tbsp vinegar
  • 2 tbsp mustard (reduce if you’re not a big fan)
  • 1-2 cloves garlic, crushed
  • 2 tbsp chopped parsley
  • Black pepper

Salad

  • Salad leaves
  • Tomatoes, chopped
  • Cucumber, sliced
  • Spring onions, sliced
  • Olives/capers
  • Peppers, sliced
  • Cold cooked potatoes, cubed
  • Cold hard-boiled eggs, peeled and halved
  • Tuna

Method

  1. Make the salad dressing by mixing all the ingredients together
  2. Using a serving platter arrange the salad ingredients
  3. Pour the dressing over but do not mix in
