Salad Nicoise
The classic dish uses tuna steaks, but I love it as a simple mid-week dinner with a jar of Shines wild Irish tuna and whatever else you have leftover. If I have some bread (stale is great) I like to make bruschetta, simply toasting the bread and then rubbing both sides with the cut side of a garlic clove and pouring some good olive oil over – simple but delicious. Add whatever you have to the salad ingredients – I didn’t put in specific quantities as you can adjust depending on numbers you have to feed.
Ingredients:
Salad dressing
- 3 tbsp olive oil
- 1 tbsp vinegar
- 2 tbsp mustard (reduce if you’re not a big fan)
- 1-2 cloves garlic, crushed
- 2 tbsp chopped parsley
- Black pepper
Salad
- Salad leaves
- Tomatoes, chopped
- Cucumber, sliced
- Spring onions, sliced
- Olives/capers
- Peppers, sliced
- Cold cooked potatoes, cubed
- Cold hard-boiled eggs, peeled and halved
- Tuna
Method
- Make the salad dressing by mixing all the ingredients together
- Using a serving platter arrange the salad ingredients
- Pour the dressing over but do not mix in
