Ingredients

  • 1 cup smooth peanut butter
  • 1/3 cup honey (or maple syrup/agave/liquid stevia)
  • 1 egg
  • 2 egg whites
  • ¼ tsp salt
  • ½ tsp baking soda
  • Tin chickpeas, drained and rinse
  • 1 tsp vanilla extract
  • ½ cup chocolate chip

Method

  1. Preheat oven to 180 degrees
  2. Grease 8x8inch baking dish with coconut oil
  3. Blend all ingredients (except chocolate chips) until smooth
  4. Melt the chocolate and add to the mix
  5. Pour mix into baking dish
  6. Bake for 27-30 mins (until skewer comes out clean)
  7. Remove and leave to set for 10 mins
  8. Cut into squares
