This is a lovely summer salad, even better now because we have great Macroom buffalo mozzarella available in most supermarkets. Serve with lots of fresh bread.

Salad ingredients

  • 2 balls of Buffalo mozzarella, in 1 cm slices
  • 4 plum tomatoes, in 1cm slices
  • 2 handfuls of basil leaves


  • 2 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • Salt
  • Pepper


  1. Mix the dressing ingredients together
  2. Arrange the mozzarella and tomato slices, alternately on a large plate
  3. Toss the basil leaves on top
  4. Drizzle the dressing over
  5. Serve immediately
