This is a lovely summer salad, even better now because we have great Macroom buffalo mozzarella available in most supermarkets. Serve with lots of fresh bread.
Salad ingredients
- 2 balls of Buffalo mozzarella, in 1 cm slices
- 4 plum tomatoes, in 1cm slices
- 2 handfuls of basil leaves
Dressing
- 2 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- Salt
- Pepper
Method
- Mix the dressing ingredients together
- Arrange the mozzarella and tomato slices, alternately on a large plate
- Toss the basil leaves on top
- Drizzle the dressing over
- Serve immediately
