Ingredients
1 large cooking apple, peeled, cored and chopped
20g butter
240g rolled oats
40g brown sugar
1tbsp sunflower seeds
½ tsp baking powder
Zest of 1 unwaxed lemon
2 eggs
240ml milk
100g blueberries
Method
Preheat oven to 175oc (gas 4)
Line a 9inch squared baking tin with parchment paper
Melt the butter in a small saucepan, add the chopped apple and cook over a low heat for 10 minutes until soft. Allow to cool
Mix oats, sugar, seeds, baking powder and lemon zest together in a large bowl
Whisk eggs and milk, add the apple and stir through
Add the egg mix into the dry ingredients in the bowl and fold in the blueberries
Pour into the baking tin
Cook in oven for 30 minutes
When cool cut into squares
