Ingredients

  • 225g/8oz white self-raising flour
  • 75g/3oz chopped walnuts
  • 2 large ripe bananas
  • 1 beaten egg
  • 15ml/1 tblsp honey (optional)
  • 45ml/3 tblsps sunflower oil

Method

  1. Mash the bananas well.
  2. Mix in egg, honey, oil, walnuts and lastly flour. Mix well.
  3. Pour into prepared 2lb loaf tin and bake for 40-50 mins at 180c/350f/gas 4.
  4. Leave in tin for 5 mins before turning out onto wire tray to cool.
